- 2 1/2 cups whole wheat flour
- 1 2/3 cup coconut sugar
- 1 1/2 teaspoons baking soda
- 1 teaspoon Kosher salt
- 1/4 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 2 eggs
- 1 1/2 cups pumpkin puree
- 1 teaspoon pure vanilla extract
- 1/4 cup coconut oil, melted
- 1/2 cup low-fat cream cheese, softened
- 1/4 cup honey
- 1/2 teaspoon ground cinnamon
- 1/2 cup chopped pecans
Preheat oven to 350 degrees. Grease and flour a 9″ x 13″ cake pan.
In a large mixing bowl, combine all dry ingredients, whisk well to combine and set aside. Add the remaining ingredients in a separate medium bowl, whisk until combined.
Pour wet ingredients into dry and stir with a large spoon just until combined. Pour into prepared cake pan and bake 45 – 50 minutes or until a toothpick inserted into the center comes out clean.
In a mixing bowl, whip together the cream cheese, honey, and cinnamon. Whip on high speed until thin. Drizzle on top of cake and sprinkle with pecans. Serve and enjoy!
